We just went to a new Japanese Hibachi Steak house & Sushi Bar called Koji here in Commerce. I fell in love with the California Roll, It makes me want to try to make my own rolls. They serve Pickled Ginger which i really like so I’m deciding to make my own. Ginger is really good for you. I have found a few different recipes and have decided on this one to try.
MINI MUFFIN PHILLY CHEESESTEAK BITES
September 28, 2012I made these last night and my wife and I really enjoyed them. I think I’m going to try either ground chicken or turkey next time and these give me other idea’s. I love these kind of finger foods that are easy to make. Although I didn’t have provolone cheese, I did however have sliced provolone i had to dice up and use. These really turned out good and can’t wait to try other ways to change them up.

1 pound ground beef
4 tbs diced ginger
4 tbs garlic
Hard baked eggs not boiled.
June 13, 2012I found this recipe to make hard baked eggs. They say it makes it easier to peel them. I will try it soon and let ya know.
Anyway here ya go.

Place the eggs in a muffin pan so they don’t roll around and place in the oven in the center of the oven.

Place the eggs on the racks.

Place a baking sheet pan in the bottom of the oven (just in case an egg breaks).

Set the oven to 325F, and bake for 30 minutes.

When the eggs are done, fill a large bowl with ice water and move the eggs into the bowl.

Peel the eggs as soon as they’re cool enough to handle, then return them to the ice water to thoroughly chill.
Scallion Cornbread with Cheddar Cheese
March 18, 2012I made this a week or so ago and it was the best cornbread I’ve had. I put a little corn in it and I used regular onions diced since i didn’t have scallions and I used Habanero Cheese since I didn’t have Cheddar Cheese.
10 Tbs all purpose-flour
1/2 cup yellow cornmeal
1 1/2 Tbs yellow cornmeal

Cucumber Salsa
March 18, 20123-5 cucumbers peeled and chopped into smaller pieces
1/4 cup of white vinegar
2 packets of dry ranch dressing mix
1 can rotel tomatoes ( i use mild chille)
1 can diced tomatoes ( i use the ones with gralic,oregano,onion)
mix it all together and let it set (if you can! )
eat it with chips or by the spoon full. it is also a good salad dressing….
This stuff is like cucumber crack!
